Chef Victor Arguinzoniz was born and raised in the rural community of Axpe, a small village surrounded by the Bizkaian mountains one hour southeast of the city of Bilbao. He is a culinary autididact, perfectionist and has only ever worked in one kitchen - his own. He designed and built his famous wood grills himself - in our opinion one of the reasons why his dishes and cuts taste so phenomenal and different.
He is in the lucky situation to have his own herd of cattle, which supply the meat and ingredients for his straight forward yet exquisite tasting menu.
The medium rare to rare prepared chuletóns of Galician heifers and cows are irresistibly good.
At Asador Etxebarri nothing distracts from the essential - a unique place where everything from local vegetables, seafood up to the Steak cuts is grilled to perfection.
