For the 2nd time in a row we are pleased to award the 1st place of our ranking to Lennox Hastie from Firedoor Sydney.
Lennox is fascinated by fire. He spent his early career working at Michelin Star restaurants in the UK, France and Spain.
His unique approach to the preparation of local and seasonal products is fundamentally different from most of his competitors and the result of this ability is a kitchen that is so exceptionally pure and unique.
Neither gas nor electricity are used in Lennox's kitchen - everything is prepared and refined in a very archaic way, using only the magic of wood and fire to get the maximum out of every single ingredient and present them in all their beauty.
For us this approach is the quintessence of instinctive cooking in its purest form and therefore voted winner of our ranking of the World's 101 Best Steak Restaurants.
