Steakhouse has also taken the unique step of hiring butchers full time to cut the beef on-site.
The classic steak seasoning they are using is designed to bring out the natural flavours of the steak cuts instead of covering them up. They use kosher salt and black pepper and finish their steaks off with butter. The steaks are seared on Montague broilers (the pepper was not burnt) to get just enough brown crust to seal in and intensify the delicious dry-aged flavour.
