Flame, precision and the art of simplicity
Set on Jumeirah Beach Road, 11 Woodfire has established itself as one of Dubai’s most compelling fire-led dining destinations - a restaurant where authenticity, craftsmanship and the elemental beauty of flame come together with striking clarity. It is a place that strips cooking back to its essentials, allowing wood, smoke and heat to reveal flavour in its purest form.
Under the direction of Head Chef Brando Moros, the restaurant is guided by a philosophy of elevating simplicity. Originally from Colombia and shaped by more than fifteen years of international experience, Moros brings both instinct and discipline to the kitchen. His approach is grounded in a deep respect for ingredients and technique, and in the belief that fire is not merely a cooking tool, but a medium through which flavour, texture and emotion can be expressed with unusual directness.
That philosophy begins with the product itself. Working mainly with Australian beef and combining both wet and dry-ageing, the restaurant builds its meat programme around quality, structure and careful handling. Fire is then used with purpose rather than display. Different woods, from oak to hickory to hay, are chosen for the character they lend, allowing the kitchen to shape aroma and intensity with precision. Whether meat, seafood or vegetables, every ingredient is treated with restraint, giving smoke and ember the role of defining rather than overwhelming.
The room reflects this same balance. The open kitchen forms the visual and emotional centre of the restaurant, allowing guests to observe the rhythm of the fire and the controlled movement of the team. There is a quiet theatricality to the space, but never for its own sake. Instead, 11 Woodfire creates an atmosphere that feels both intimate and cosmopolitan - grounded in the primal appeal of cooking over flame, yet entirely in step with Dubai’s modern dining landscape. At the same time, the restaurant itself, particularly in terms of interior design, appears to have passed its zenith - especially when viewed against the level of competition in Dubai, where design and atmosphere continue to evolve at remarkable speed. Here too, one senses that fresh investment and renewed attention would be beneficial.
At the same time, the talent of Brando Moros is beyond dispute. Yet talent at this level also brings expectation. A restaurant that belongs among the best cannot afford complacency, and one is sometimes left with the impression that the wider team does not always carry the same degree of urgency, motivation or awareness of what it truly means to justify such standing. To remain at this level demands that the very best be given for every guest, every day - not occasionally, but consistently. That is the true measure of greatness, and also the challenge that comes with it.
Service supports the experience with polish and composure, helping the restaurant maintain a sense of ease despite the intensity of what happens at the grill. There is focus here, but also warmth, and that balance reinforces the wider impression of a restaurant built on serious intent rather than excess.
11 Woodfire deserves its place in the ranking for offering one of Dubai’s most persuasive expressions of fire-led dining - a restaurant where product, technique and atmosphere are held together by a clear and disciplined vision.
