Grill Americano succeeds because it understands that confidence in the kitchen is most convincing when it does not need to announce itself too loudly.
The meat programme reflects that same sensibility. Working with Australian beef and combining both wet and dry-ageing, the kitchen builds flavour through careful maturation before bringing each cut to the open fire. Grill Americano earns its place in the ranking as one of Melbourne’s most visually striking and atmospherically assured grill restaurants - a place where design, fire and hospitality come together with real confidence. The interior, in particular, is quite wonderful and without doubt one of the restaurant’s strongest assets. Yet beautiful design alone is not enough to justify a place among the World’s 101 Best Steak Restaurants in the future. At this level, it is the details that make the difference - in service, on the plate and in the consistency with which both are delivered. And here, on weaker days, the fluctuations remain too noticeable and ultimately not convincing enough. Under Vincenzo Ursini and the wider vision of Chris Lucas, the restaurant clearly has the framework and appeal, but to hold or improve its standing internationally, those finer margins will need to be addressed with greater consistency. With Grill Americano now also opening in Sydney, the next chapter of the concept is already beginning to unfold beyond Melbourne and we look forward with real interest to seeing where that journey leads.
