Steak excellence, re-centred for modern San Francisco

On the waterfront at Chase Center, Miller & Lux represents a modern American beef restaurant with a clear sense of place. It draws on classic steak traditions, but it does not feel heavy or nostalgic. Under chef-owner Tyler Florence, the restaurant is built around a familiar promise - premium beef, precise cooking and confident hospitality - delivered in a way that feels distinctly Californian.

The room sets the tone. The design leans into quiet glamour with marble, leather and soft light, creating an atmosphere that feels both grand and approachable. It is a restaurant designed for pace and comfort as much as for occasion, and the overall experience benefits from that balance.

At the centre is a beef programme defined by selection and provenance, with steaks chosen for impeccable flavour and sourced from leading American ranches. The offering is supported by a robust raw bar, sustainable seafood and farm-direct vegetables, which gives the menu breadth without diluting its focus. American beef sits alongside A5 Japanese Wagyu and Australian Wagyu, allowing the restaurant to move across different expressions of richness and structure while keeping the standard consistent.

What stands out at Miller & Lux is the seriousness of hospitality. Tyler Florence’s engagement is felt in the way the restaurant is run: polished service without stiffness, timing that respects the guest and an overall sense that the room is being guided rather than simply staffed. This is where the restaurant earns its identity beyond the plate, turning a beef-focused meal into a complete experience.

Florence is also taking a different path from the mainstream American steakhouse model, and it is a direction we genuinely welcome: driven by expertise, confidence and verve, grounded in provenance and built around a modern sense of hospitality rather than nostalgia. That point of view is part of what makes Miller & Lux feel relevant, not just well executed.

Wine and cocktails complete that sense of range. The wine list is curated globally and built to match the full spectrum of the menu, from raw bar and seafood to richer cuts from the grill. The cocktail programme is equally considered, using seasonal ingredients and artisanal spirits from around the world, and it reinforces the impression of a restaurant designed to feel complete rather than one-dimensional.

After making its debut in the 50 Best Steak Restaurants in North America, Miller & Lux now enters the World’s 101 Best Steak Restaurants as a highly acclaimed new addition. It earns that place through coherence: strong product, precise cooking and a hospitality culture that feels intentional, not generic.
