Jackson Boxer’s creation at Dove shows how far a burger can be elevated through careful preparation and thoughtful use of ingredients. The patty is made from a blend of 50-day dry-aged British beef – rib cap, brisket, chuck and suet – seared in beef dripping to achieve a flavourful crust and a juicy centre. It is finished with melted Gorgonzola Dolce and a delicately balanced Champagne-butter onion Lyonnaise, served in a fermented potato bun that is both springy and sturdy.
With only ten burgers prepared each evening, this dish has gained a certain exclusivity in London.
