At Sip & Guzzle, the burger is a study in balance and flavour, elevated to an entirely new level through uncompromising craftsmanship. Each day, the team transforms prized trimmings of A5 wagyu tenderloin into just twelve fresh patties. Because this cut is both fatty and delicate, the meat is bound with a touch of cured Jidori egg yolk before being seasoned, caramelised in a hot cast-iron pan, and basted with beef tallow and foaming butter.
The patty is then brushed with a hint of tare sauce and topped with a house-made Parmesan “Kraft single” – an umami-rich homage that melts luxuriously over the meat. The sesame potato bun, created in collaboration with Bread’s Bakery – an award-winning New York institution near Union Square – is toasted with dry-aged beef tallow to add depth and texture.
The layers are built with precision: house-fermented shishito pepper relish spread on the top bun, while the bottom is anchored by Binchotan-smoked aioli and a cured napa cabbage slaw. As a playful finishing touch, the burger is garnished with a house-fermented pickle, served on a samurai sword skewer.
The result is a burger that feels both familiar and refined – approachable in style, yet executed with meticulous technique and a clear respect for flavour.
