Gillis – Ghent’s Meat-Driven Masterpiece Continues Its Ascent

In the heart of Belgium’s ever-evolving culinary landscape, Gillis in Ghent has firmly established itself as one of the country’s most compelling dining destinations. Just steps away from the historic city centre, this modern steakhouse—guided by the vision of chef-owner Bram Candries—has once again climbed the ranks in the World’s 101 Best Steak Restaurants, earning recognition for its exceptional performance in 2025.

Gillis offers a refreshingly contemporary interpretation of Flemish cuisine, where time-honoured techniques and regional ingredients are elevated by a refined, modern aesthetic. The atmosphere strikes a careful balance between urban elegance and rustic charm, with exposed wood, soft lighting and industrial touches creating a space that feels both intimate and effortlessly stylish.

The kitchen operates around a sharing concept—generous, beautifully composed plates designed for communal indulgence. Signature highlights include the hand-cut Holstein beef tartare, a dish of texture and clarity; the slow-cooked Duroc pork belly, rich, tender and full of umami; and the beloved pork cheek croquettes, served with a tangy Belgian pickle mayonnaise that bridges tradition and innovation in one perfect bite.

Candries’ commitment to radical quality is evident in every aspect of the menu, from meat sourcing to seasoning. Steaks come from carefully selected producers across Europe, including aged cuts that are grilled to perfection and carved for the table. There is confidence in the simplicity—no excess, just respect for the product.

The wine list, curated by Bram himself and executed with polish by the sommelier team, reflects a deep understanding of pairing and provenance. With an emphasis on Old World classics, the list includes standout Burgundy, Rhône and Piedmont selections, alongside hidden gems that reveal the team’s passion for soulful, structured wines.

Service is professional yet warm, led by Jozefien, Bram’s wife and the restaurant’s gracious front-of-house presence. The staff combine sharp attention to detail with a relaxed, genuine hospitality that puts guests at ease from the moment they arrive.

In 2025, Gillis is not just a place to eat—it’s a place to experience Flemish culinary culture reimagined through excellence, sharing and uncompromising quality. With a clear identity, a devoted following and its highest-ever ranking so far, Gillis continues to raise the bar - not just for Ghent, but for Belgium.
