Founded by Nemanja Borjanović and William Sheard of Txuleta, alongside Head Chef Richard Foster—formerly of Chiltern Firehouse—Ibai is a celebration of exceptional beef, open-fire cooking and bold, rustic elegance.
Chef Richard Foster, renowned for his tenure at Chiltern Firehouse, leads the kitchen with a focus on showcasing the depth and character of Basque cuisine. His expertise ensures that each dish, from the simplest starter to the most complex main, is executed with precision and passion.
At the heart of Ibai’s menu lies the Galician Blond beef, sourced from retired dairy cows aged between 8 to 12 years. These cuts, including T-bone, sirloin and rib, are known for their deep, mature flavours and are grilled to perfection over a custom-built charcoal grill.

• Croque Ibai: A decadent toastie filled with boudin noir, carabinero prawns and Tomme de Brebis cheese, finished with a drizzle of honey.
• King Crab Rice: A luxurious dish featuring succulent king crab atop rich, bisque-infused rice.
• Beef Tartare: Brightened with Espelette pepper, offering a vibrant twist on a classic.
Ibai employs a multi-tiered charcoal grill, allowing for precise control over cooking temperatures.
