The Devonshire Soho - a wood-fired steakhouse rooted in British tradition

Tucked away on Denman Street in the heart of Soho, The Devonshire has swiftly become one of London’s most sought-after dining destinations. This three-storey establishment masterfully combines the charm of a classic British pub with the sophistication of a modern grill room.

The culinary direction of The Devonshire is spearheaded by Ashley Palmer-Watts, renowned for his tenure at The Fat Duck and Dinner by Heston Blumenthal. While Palmer-Watts has meticulously crafted the menu, the daily kitchen operations are entrusted to Head Chef Jamie Guy, formerly of Hix Restaurants. Together, they deliver a menu that celebrates British culinary heritage with contemporary flair.
At the core of The Devonshire’s culinary offerings is a bespoke wood ember grill, a rarity in London’s dining scene. This impressive three-metre-long grill uses wood embers instead of charcoal, imparting a distinctive smoky flavour to the dishes. The use of wood embers requires meticulous attention, ensuring each cut of meat is cooked to perfection.

The Devonshire takes pride in its in-house butchery, led by Head Butcher George Donnelly.

The restaurant sources exceptional Scottish beef, which is dry-aged and butchered on-site. Signature offerings include:
• Bone-in Ribeye: A substantial cut, dry-aged to enhance its depth of flavour.
• Beef Chop: Weighing up to 1.6kg, this cut showcases the restaurant’s commitment to quality and tradition.

Each steak is accompanied by classic sides such as duck fat chips and creamed leeks, reinforcing the establishment’s dedication to British culinary traditions.

The Devonshire’s interior exudes warmth and elegance, with wood-panelled walls, white tablecloths and period lighting. The upstairs dining rooms offer a serene atmosphere, providing a contrast to the lively pub below. This setting, combined with attentive service, ensures a memorable dining experience.
